Recipe: Sweet 'n' Savoury Marshmallows


Here's a cheat's guide to making your own marshmallows. This recipe shows you how to melt them down so you can add your own flavour profiles to them- perfect for beginners. In this batch we've opted for rosewater & pistachio and peanut & sriracha. So good! Give them a go and add your own twists.


The Marshmallows

  • 2 tbsp cornflour
  • 50 g icing sugar
  • 500 g marshmallows

For Savoury

  • 1/2 tbsp sriracha
  • 1 tbsp peanuts
  • 1 tbsp lime zest

For Sweet

  • 1 tsp rose water
  • 1 tbsp pistachio nuts, chopped
Melt the Marshmallows

Step 1

Melt The Marshmallows

Line 2 small trays with clingfilm (cutting it long enough to hang over the edges a bit). Mix the cornflour and icing sugar and dust with plenty of the mix. Tip the marshmallows into a medium saucepan over a medium heat. Melt the marshmallow in the pan then split the mix. Add the savoury flavours to one half and the sweet flavours to the other.

Tip your marshmallow mixes into the prepared trays. Cover with more icing sugar and leave to set at room temperature for a few hours.


Step 3


Lift the marshmallows out of the trays using the excess clingfilm then cut using a hot knife. Dust with more icing sugar. Makes 20 marshmallows
