Recipe: ULTIMATE MARSHMALLOW HOT CHOCOLATE
This recipe goes far beyond your normal hot chocolate and you need to cook it up on weekend winter night in. You may be used to popping marshmallows on top of your drink but how about melting them into the mix beforehand too? Now that's an idea! Makes 4 hot chocs.
For The Hot Chocolate
- 150 g marshmallows
- 1 tbsp butter
- 1 tbsp brown sugar
- 1/4 tsp ground cloves
- 250 ml whole milk
- 100 ml double cream
- 100 g 70% dark chocolate
- 1/2 vanilla pod
- 1/4 tsp salt
For The Garnish
TOAST AND MELT MARSHMALLOWS
Toast the 150g of marshmallows using a blowtorch.
Melt the butter in a medium saucepan over a high heat. Let it foam and add the brown sugar and cloves. Cook for a minute until the sugar begins to caramelise then add the marshmallows,.
ADD THE CHOCOLATE
Let the marshmallows and the sugar melt before adding the milk a little at a time, stirring it in to the marshmallow completely before adding more.
Remove the pan from the heat and add the chopped dark chocolate. Stir it in.
Scrape the seeds from the vanilla pod and add them to the hot chocolate with the pinch of salt.
ADD THE CREAM AND SERVE
Stir the double cream into the hot chocolate.
Pour into mugs and squeeze marshmallows into the top. Toast with a blowtorch and serve.
Makes 4 hot chocolates.
