Recipe: Christmas Spice Cake

CHRISTMAS SPICE CAKE

Here's a recipe for your winter baking collection! It's a fantastically festive apple spice cake. Not only does it taste like Christmas, it looks and smells the part too. Fruit cakes don't need to be boring when you've got this recipe to hand.

Ingredients

  • 300 g plain flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon powder
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1 tsp ground cloves
  • 240 ml rapeseed or sunflower oil
  • 350 g light brown sugar
  • 180 g apple sauce
  • 4 large eggs
  • 2 tsp vanilla extract
  • 100 g grated parsnip
  • 50 g glace cherries
  • 50 g dried apricots
  • 150 g dried figs
  • 2 granny smith apples

Preheat the oven to 180ºC and grease a spring form baking tin.

In a large mixing bowl combine the dry ingredients and the spices. In another bowl whisk the oil, brown sugar, apple sauce, eggs, and vanilla extract together in a medium bowl. Pour the wet ingredients into the dry ingredients and whisk until combined. Fold in the grated parsnip and the chopped glace cherries, dried apricots and figs until combined.

Core and thinly slice the apple across, so that there is a hole in the middle of each slice. Arrange a next layer of apple slices over the bottom of the springform tin. Pour the batter over the apple slices. Bake for 60 minutes.

Remove the cake from the oven when the fats in the cake are no longer crackling. Remove from the pan and place the cake onto a wire rack. Allow to cool at room temperature.

Serve up in the middle of the table and let people grab slices with a cup of tea! Serves 8-10
