This is THE Christmas recipe of the year. No one ever knows quite what to do with leftover Christmas cake but finally there's a solution. Cut up a big slab, fry it and top it off with orange segments, cranberries, spiced cream, nuts and chocolate drops.
Preheat the grill to medium-high. Take any icing or marzipan off your christmas cake (save it!). Peel and segment the orange.
Whip the double cream with the icing sugar and the mixed spice.
Scatter the sugar over the cake slices and grill for 3-4 minutes, until the sugar caramelised and the cake begins to crisp up on top. Leave it to cool for 5 minutes.
Dollop the whipped cream and cranberry sauce over the cake slices and arrange the orange segments in between. Crumble your saved icing or marzipan and scatter it over the toast along with the chocolate chips and flaked almonds. Serves 2
