Tim Tam Cheesecake
A cheeky little idea for you! Take a Tim Tam (or your favourite choccy biccie) and sandwich it back together with this gorgeous cheesecake filling. It's a no-bake, easy peasy recipe.
- 100 ml double cream
- 250 g full-fat mascarpone cheese
- 40 g icing sugar
- 25 g milk chocolate, melted
- 1 tbsp malt powder
- 1 tsp vanilla extract
- 8 tim tams
- 25 g white chocolate, melted
- 25 g dark chocolate, melted
Make The Filling
Whisk the cream to soft peaks then add the cream cheese, icing sugar, milk chocolate and malt powder and vanilla extract before continuing to whisk until you have a stiff mixture.
Carefully ease apart the tim tim biscuits to get two separate biscuits. Pile the cheesecake mix onto the bottom biscuits and gently place the other biscuit back on top.
Use a palette knife to smooth the edges and put them in the fridge for a few hours to set up.
Decorate And Serve
Drizzle over your melted white and dark chocolate
