Recipe: Baked Popcorn Chicken
Popcorn chicken is the perfect thing to serve as a sofa snack for a casual night in or as a canape at something a little posher. This recipe is actually baked popcorn chicken, which is that little bit healthier without sacrificing any of the taste or the crunch.

For The Chicken
- 300 g chicken breast
- 50 g buttermilk
- 1 tbsp sriracha
- 100 g plain flour
- 1 tbsp dried basil
- 1 tbsp dried oregano
- 1 tbsp dried thyme
- 1 tbsp garlic powder
- 60 g icing sugar
- 1 tsp fresh ground black pepper
- 1 tsp salt
- 100 g egg whites
- 100 ml whole milk
- 500 g panko breadcrumbs
For The Bbq Sauce
- 100 g honey
- 2 tbsp soft dark brown sugar
- 1 tbsp smoked paprika
- 50 ml water
- 50 ml cider vinegar
- 150 g tomato ketchup
- 2 tsp smoked tabasco sauce
- 2 tsp worcestershire sauce
Prepare The Chicken
Place each chicken breast on a chopping board and cover it with a sheet of greaseproof paper. Pound the chicken to a uniform thickness of 1cm using a rolling pin.
Dice the chicken breasts into very small pieces (about 1cmx1cm).
Marinate the chicken in the buttermilk and sriracha for at last a few hours or overnight.
Preheat The Oven
Preheat the oven to 200ºC
Breadcrumb The Chicken
Add the flour, mixed spice, onion powder, icing sugar, pepper and salt to a mixing bowl. Coat the chicken pieces in the flour.
In another mixing bowl whisk together the egg whites and the milk until well combined.
Dip the chicken into the egg white mix, then coat them in the panko in batches.
Dip the coated pieces in the egg white mix a second time and coat in the panko for a second time.
Bake The Chicken
Place the chicken onto a baking tray, or two if the tray is crowded.
Drizzle oil over the chicken and season well with salt and pepper.
Bake for 15 minutes, until the bread is golden and crisp.
Make The Dip And Serve
For the BBQ dip add the honey, sugar, smoked paprika and cayenne pepper to a small saucepan and heat until everything is dissolved together.
Pour in the water, vinegar and tomato ketchup and bring to a simmer.
Reduce the sauce for 5-10 minutes until it thickens slightly.
