Community Recipe: Out 'n' In Burger

This is the burger to end all burgers.


  • 2 tsp smoked paprika
  • 1 tbsp sriracha
  • 4 slices American cheese
  • 2 tbsp ketchup
  • 2 tsp sriracha
  • 1 tbsp sriracha
  • ½ tsp nutmeg
  • 8 rashers smoked streaky bacon
  • 1 tbsp American mustard
  • 1 beef tomato, sliced
  • 500 g beef mince
  • 1 tsp smoked paprika
  • 4 sesame buns
  • 2 tbsp jalapeño
  • 2 tsp smoked paprika
  • 1 tbsp jalapeño
  • ½ red onion
  • ¼ baby gem lettuce
  • 1 tbsp honey
  • 50 g cold beef dripping
  • 2 tbsp mayo

Throw the mince into a large mixing bowl with the nutmeg, smoked paprika and sriracha. Roughly chop the beef dripping and jalapeños and add that to the mixing bowl. Get your hands involved and give everything a good mix up.

Form the mince into thin patty of about 100g each and lay out on a baking lined with greaseproof paper put them in the fridge until you’re ready to cook. Preheat an oven to 200ºC.

In a small bowl mix the hot sauce, honey and smoked paprika for the bacon. Line another baking tray with greaseproof paper lay out the bacon and brush it generously with the hot sauce mix. Bake the bacon for 12 minutes, until very caramelised.

Peel and dice the onion. Quarter and shred the lettuce. Throw both into a mixing bowl and add the mayo, ketchup and mustard. Mix together everything in the mixing bowl.

Fry it up!

Fry It Up!

Preheat a frying pan or griddle pan over a high heat. Fry the burgers for 4 minutes on each side before adding the cheese and a lid (or a tray) over the top. Fry for another minute to melt the cheese before removing the burgers to a plate. Wipe the pan if there’s excess oil, then add the sliced buns to toast for 30 seconds to a minute.

Spoon a generous amount of the burger sauce onto the bottom bun, followed by the burger. Slice the tomato and add a few slices with some jalapeño slices. Drizzle some extra sriracha on top with you like and add the top of the bun. Serve with dirty fries and onion rings. Serves 4
