Community Recipe: Barry's Spilled Guts Cheesecake

Guts on a Cheesecake actually works surprisingly well! But seriously they're not guts, they're strawberry laces you silly.


  • ½ tsp red food colouring
  • 500 g mascarpone cheese
  • 180 ml liquid glucose
  • 300 g oreos
  • 300 ml double cream
  • 2 tsp vanilla extract
  • 3 tbsp cornflour
  • 1 tsp lemon flavouring
  • 1 handful strawberry laces
  • 300 ml water
  • 100 g icing sugar
  • 90 g butter
Make the topping

Meanwhile, in a small saucepan stir the cornflour and the liquid glucose into the cold water to make a smooth paste. Bring it to a simmer over medium heat and cook for 2 minutes while stirring, until it’s visibly thickened. Remove the pan from the heat and stir in the lemon flavouring and red colouring. Leave to cool for 15 minutes.

Arrange the strawberry laces on the top of the cheesecake then remove the cheesecake from the tin, taking it off the base and onto a cake stand or plate. Pour the lemon gel over the strawberry laces, letting it fall over the edges. Chill for another 30 minutes to set the gel.

Serve your gruesome creation to guests. Serves 8

Blitz the oreos to a fine crumb and melt the butter. Combine the two in a large mixing bowl until the texture is like wet sand. Pack the mix into the bottom of a round 20x20cm loose bottomed cake tin, making sure it’s level. Put it into the fridge to set while you make the cream cheese mix.

Whisk the cream to soft peaks then add the cream cheese, icing sugar and vanilla extract before continuing to whisk until you have a stiff mixture. Spoon the mixture over the base and smooth out. Leave to set in the fridge for about 4 hours.
