Trick or Treat?! MUHAHAHA! Half of these are filled with a delicious chilli chocolate ice cream and caramel sauce. The other is the same but with an eye popping amount of chilli. Enjoy!

Ingredients

  • 600 ml double cream
  • 50 g caramel sauce
  • 2 tbsp liquid glucose
  • 100 ml water
  • 1 tbsp cocoa powder
  • 2 drops good red food colouring
  • 6 pink lady apples
  • 1 tbsp lemon juice
  • 1 fresh red chilli
  • 1 g condensed milk
  • 2 tsp dried chilli flakes
  • 1 handful pistachio and dark chocolate crumb
  • 100 g dark chocolate
  • 250 g sugar
make the ice cream

Step 1

Make The Ice Cream

Pour the cream into a large mixing bowl and whip to soft peaks. Add the condensed milk, cocoa powder, dark chocolate and very finely chopped chilli and stir everything together. Freeze for 4 hours or overnight. Take the ice cream out of the freezer 30 minutes before you need it.

Slice off the tops of the apples just underneath the stalk (save them!). Using a teaspoon scoop out the inside of the apple. Squeeze the lemon juice around the inside of each apple you scoop.

Take the apples out of the freezer and wipe off any frost. Heat the sugar, water and liquid glucose until it goes a golden brown, then add the food colouring. Dip in the apples and quickly turn them around to be coated. Serve on your edible soil! Makes 6

Grab the ice cream and pack it into the hollow apples up to about half way. Drizzle a layer of caramel over the ice cream then fill the remaining space with more ice cream! If you want to play apple roulette, add a few (or a lot) more chilli flakes in some of the apples. Place the tops back on and put the skewers right through the middle. Put the apples back in the freezer for another 4 hours until completely frozen.
