Posh Mashed Potatoes 3 Ways

Here's how to level up your mashed potatoes. Add carrots, cheese and endive. Looks cool and also tastes great!
- 1 kg starchy potatoes
- 1/2 edive
- 3 carrots
- 1 clove of garlic
- 1 tsp thyme
- 2 spring onions
- 1 tbsp crème fraîche
- 120 g french soft cheese (Tomme de Savoie)
- 2 tbsp olive oil
- 2 tsp white wine vinegar
- 250 ml milk
- 150 g butter
- pinches of salt, pepper, cayenne pepper, cumin and nutmeg
Boiling The Potatoes
Set up a pot with cold water. Skinned potatoes go in. Bring to a boil and boil for 20 minutes. When ready, get rid of the water and mash the potatoes with some milk and butter. Season with salt, pepper and nutmeg. That's yout basic mash.
1. Fry carrots in a pan with olive oil. Season with salt, pepper, cayenne pepper, thyme and cumin (maybe a little bit of sugar). Mash it. 2. Blend a hand full of fresh endive and spring onions with some olive oil and vinegar (You can use a bit of the starchy boiling water from the potatoes, if you need more liqud) season with salt and pepper. 3. Heat up the cheese with a bit of milk and let it dissolve. Grid in a clove of garlic, season with salt + pepper and add the crème fraîche. Thats it. There you have three things to stir in your mashed potatoes.
If you want to turn this into a starter like I did, you need this very dark, double baked "black bread" (or brown bread?) to serve it on. It is kinda traditional thing here. Enjoy!
