Recipe: Microwave Nut Brittle
Nut brittle? A recipe you can make in a microwave? YES! In this version we've used an array of cashews, peanuts and almonds but you can mix it up how you like. We developed this recipe with students in mind because it's so easy peasy but we know that everyone will love it.
- 200 g caster sugar
- 150 g liquid glucose
- 2 tbsp butter
- 50 g peanuts
- 50 g almonds
- 50 g cashew nuts
- 1 tsp vanilla extract
- 1/4 tsp bicarbonate of soda
Cook The Sugar
In a mixing bowl stir together the caster sugar and liquid glucose.
Microwave on high for 5 minutes.
Roughly chop the nuts and add them to the sugar with the butter.
Microwave for another 5 minutes and careful take it out of the microwave using a towel or oven glove… it will be hot!
Finish And Cool
Add the vanilla extract and bicarb of soda, quickly stir it and pour it over a baking tray lined with greaseproof paper to get a thin layer.
Leave the brittle to cool.
Makes 1 slab of brittle
