Recipe: Deep Pan Pizza

DEEP PAN PIZZA

You asked and we made it! Here's our Chicago style Deep Pan Pizza recipe. It's the best. While the dough takes a bit of time, this might just be the quickest pizza you've ever made! We don't even use an oven to get this awesome vegetarian version cooked. It's straight up in a frying pan.

Ingredients

  • 300 ml warm water
  • 7 g dried yeast
  • 1 tbsp salt
  • 1 tsp garlic powder
  • 500g g fresh cherry tomatoes
  • 50 g basil
  • 2 cloves of garlic
  • 100 g grilled artichokes
  • 100 g fresh washed spinach
  • 2 g dried chilli flakes
  • 1 small red onion
  • 1 ball of mozzarella
  • 1 chunk of Parmesan
  • 500 g pasta/pizza flour
Activate the Yeast

Combine the warm water with the yeast in a jug and leave to one side for a moment.

Make the Dough

Stir the salt and garlic powder into the flour and pour in the liquid. Bring it together to form a dough using a spatula, then get your hands involved and knead on a floured surface for 10 minutes.

Divide into 4 equal sized balls and place each piece on one quarter of a floured tray, leaving plenty of small between them. Brush with oil, cover with clingfilm and chill in the fridge overnight.

Make the Sauce

Blitz the tomatoes up with the garlic clove, basil and a pinch of salt and pepper, then transfer to a hot saucepan and bubble to reduce for 2-3 minutes. Move the tomato sauce to a bowl and dump the spinach into the hot pan to wilt in the residual heat.

Squeeze excess water from the spinach. Peel and finely slice the red onion.

Roll the Dough

Preheat a grill as high as it will go and place a frying pan on the hob to heat up. Roll one dough ball to the diameter of the base and sides of the pan and about 1cm thick.

Drop it in to the hot pan and then as it begins to cook from underneath, add the filling on top.

Spoon in some tomato sauce, scatter over the finely sliced red onion, artichoke hearts and wilted spinach. Tear up some mozzarella and grate over plenty of Parmesan with a pinch of chilli flakes.

Transfer the pan pizza to the grill after 3 minutes on the hob for about the same length of time.
