Sri Lankan Chicken Kottu Roti

- Curry Paste Ingredients .
- 3 whole garlic cloves
- 1 whole red onion
- 1 whole chilli
- 2 inches of ginger
- 1 tsp tomato puree
- 6 Curry leaves
- 1 Chicken Stock cube
- Kottu Ingredients .
- 1 whole large red onion
- 2 tbsp of medium curry powder
- 1 large leek, sliced
- 2 carrot shavings
- 1 red chilli (save for topping)
- 1/4 white cabbage
- 6 Roti Bread (or wraps)
- 1 large egg
- 3 chicken pieces or breast, chopped
- 1 garlic clove, sliced
Blend the garlic, ginger, onion, curry leaves, stock cube, chilli and tomato puree in the blender until it forms a paste.
Next slice the garlic, onion, leek, chilli and cabbage into slim strips and shave the carrots with a standard peeler. Then with your roti (most supermarkets sell them) roll them up into a tight wrap and slice across creating strips and then chop roughly into smaller strips.
Chopped your chicken into bite size chunks and cover in curry powder. Then crank up the heat on the frying pan and add the coconut oil followed by the garlic and chicken, cooking for 3 minutes.
Next add the vegetables slices and cook for 1 minuet. Make space in the middle of the mixture, adding the beaten egg and stir in for 1 minute.
Finally, add the roti and 2 tbsp of the paste and combine well. If you find it too thick add 2 tbsp of water to the mixture.
