Recipe: Bacon Wrapped Avocado Scotch Egg

BACON WRAPPED AVOCADO SCOTCH EGG

Was inspired by a couple of recipes I found on the net so fiddled with them and different variations.. This brunch dish is relatively low fat and full of protein and quite easy. I tried frying it but the bacon shrank and pulled away (still tasted great) so I baked this one and it worked perfectly. Looks pretty impressive too for guests... just saying.

Ingredients

  • 1 whole Avocado
  • 1 whole Egg
  • 5 strips Streaky Bacon
Egg Poaching

Poach the egg in gently boiling water with a dash of vinegar in until just done

Scoop the avocado

Scoop The Avocado

Scoop out the avocado out of its skin and take out the pip and enlarge the hole (size and depth) to hold the egg. Keep the excavated avocado to patch any holes you have )its basically like playdoh.

Put the eggs in the hole

Put the eggs back together and use any extraneous avocado to patch any holes

Lay out the bacon strips ready for wrapping

Wrap the egg in the bacon. Don't worry if there is a little green peeping out, it wont matter.

Bake in a hot (220 deg C) oven for 20 mins or so until the bacon is cooked and a little brown, the insulation of the avocado should keep the egg a bit runny. Enjoy.
