UPSIDE DOWN GINGER PLUM CAKE

Plums are in season and were getting a bit too ripe to eat so decided to make this spicy gingery plum cake, so good

INGREDIENTS

STEP-BY-STEP-GUIDE

Heat oven to 180C Grease and line the base of square cake tin with baking parchment. Butter the paper generously and sprinkle with the demerara sugar. Halve the plums and arrange in the base of the tin

Melt the butter syrup and sugar and leave to cool

Once cooled add the eggs and milk and mix and then add the flour spices and bicarbonate of soda

Pour the mixture over the plums in the tin and put in the oven for about 40 mins

Take out of the oven, leave to cool in the tin for 10 mins and then remove Once cooled store in the fridge
