Recipe: Roasted Roots

ROASTED ROOTS

A real autumn treat! Oven baked root vegetables are the best. They're sweet, cheap and healthy! I combined them with fish and tzatziki sauce this time, but chicken, meat or maybe salmon works just as well! No measurements, just make as much as you like.

Ingredients

  • Parsnip
  • Potatoes
  • Red onion
  • Olive oil
  • Salt & Pepper
  • Carrotts

Chop your vegetables of choice and preheat the oven to 200 degrees.

Put the vegetables in an ovenproof form, drizzle som oil over them and season. Bake for about 30 minutes.
