Hosting a canapé party sounds VERY formal. But in reality it's just getting together with a few friends or family and offering a few bites of food to help the occasion along. preheat the oven to 190°C.
peel the sweet potatoes and slice into rounds about 1cm thick and 2cm across, use a pastry cutter to make them all the same.
place in a single layer on a lightly oiled baking tray. brush with olive oil and season with salt and pepper.
bake the sweet potato in the oven for about 15 minutes until just soft and lightly browned. remove from the oven and allow to cool.
top each potato round with some folded parma ham then crumble the goat’s cheese on top of that. return to the oven for a few minutes until the cheese has slightly melted. serve warm. makes approx 16 rounds
slice the courgettes into rounds about 3cm thick. use a teaspoon to remove the courgette flesh, making sure you leave a small layer at the bottom to form a cup.
chop the spare courgette flesh finely and add two thirds to a mixing bowl with the ricotta.
grate the parmesan and add two thirds to the bowl of ricotta and courgette. add the zest of the lemon and mix the ingredients thoroughly and season with salt and pepper.
use a teaspoon to fill each courgette cup with the mixture and level the top.
sprinkle the tops with the remaining parmesan and place on a baking tray. bake for 10-15 minutes or until the cheese is nicely browned and crisp.
Serve the two canapes together. Makes 16-18 of each.
