Merging two recipes... a soothing yoghurt based drink from India and one of the first recipes Ben ever cooked as a kid! Banana and chocolate in a combo that's made for them!
preheat the oven to 180°C.
whisk the egg whites until stiff in a clean bowl. add the caster sugar and whisk again until glossy and holding it’s shape.
fold the coconut and cocoa into the egg white very carefully to maintain as much air as possible.
spoon 12 tablespoons of the mixture onto a lined baking tray in mounds.
bake for 15 minutes until they are starting to turn brown, but will still be soft as they harden as they cool. allow to cool, then lift off of the baking paper.
peel the bananas and blitz in a liquidiser with the yoghurt, honey, cardamom and ice.
divide the lassi drink between 4 glasses and share out the coconut chews. Lassi serves 4, makes 12 chews.
