These amazing little bliss balls is a healthier option inspired by a classic Swedish cake called ‘chokladbollar’ (I have a recipe for those up on SortedFOOD). These little nibbles still feel like a treat despite being good for you. Soft and gooey with a rich chocolate flavor that makes it easy to gollop the whole recipe down in an afternoon.
Ingredients
- 2 medium sized bananas
- 2 tbsp strong, cold coffee
- 90 g oats
- 3 tbsp cacao powder
- 35 g shredded coconut (+ more)
Step 1
1.
Mix the bananas in a large bowl until completely smooth, this can be done with either a food processor, a handheld mixer or a fork. Pour in the coffee and give it another good mix making sure there are no lumps or banana chunks.
Step 2
2.
Add in the oats, cacao powder and shredded coconut to the coffee-banana mixture and stir until combined. Pour the shredded coconut (or something else you want to coat them in) onto a plate, form small balls of the mixture and roll them into the coconut. Allow to set up in the fridge. Stores well for a couple of days in the fridge.
