Recipe: Miso Grilled Aubergines


Miso just makes things taste good. Aubergine is the perfect veg to grill on the bbq (smoke + aubergine = yum). So miso and aubergine together in one epic bbq side dish seems like a no brainer.


  • 500 g aubergines (2-3)
  • 1 tbsp miso
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp chilli flakes
  • 2 tbsp groundnut oil

Cut the aubergines in half lengthways, then cut those in half lengthways again, to get long quarters.

Make The Glaze

Combine the miso paste, soy sauce, honey, mirin, chilli flakes and groundnut oil. Brush the miso mix over the aubergines and season with a little extra salt and pepper.


Step 3


Get them on the grill! Grill for 5 minutes on each side, until they’re just soft, but still have a bit of bite. Transfer to a plate and serve up. Serves 4
