A whole side of salmon is one of the best things to cook for a big crowd and it looks amazing in the middle of the table. This recipe with soy glaze is easy to cook and you just let everyone dig in after it's come off the BBQ smokin' hot.
Pour the soy sauce into a saucepan. Add the lime juice and brown sugar. Deseed and finely dice the chillies, slice the ginger and crush the garlic. Add all of these to the pan. Put the pan over a high heat and bring to a boil. Let it bubble for 10 minutes until it thickens into a loose syrup.
Brush the syrup over the salmon and preheat the grill to high. Line a large baking tray with foil. Place the salmon onto the baking tray and slide the tray onto a high rack. Grill for 10 minutes, then move to the oven to finish off for another 5 minutes.
Serve the whole side in the foil and let everyone dig in. Serves 10
