Community Recipe: Vegan Ice Cream Cake

This is the winning recipe for the vegan battle. Who doesn't like an ice cream cake?


  • 50 g peanut butter
  • 25 g dark chocolate
  • 150 g rice krispies
  • 6 tbsp Cocoa powder
  • 300 g bourbon biscuits
  • 6 overripe bananas
  • 100 g coconut oil
  • 2 tsp vanilla extract
  • 1 tsp sea salt
  • 50 g cashew nut butter

Freeze The Bananas

Slice the bananas into thin chunks and place onto a baking tray lined with greaseproof paper (they can overlap a bit). Freeze the banana slices overnight.

Crush the biscuits in a ziplock bag and melt the oil in a small pan or a microwave. Stir the oil into the biscuits and press the mixture into a loose bottomed springform pan. Stir the nut butters and sea salt into the rice krispies until well combined.

Place the frozen bananas into a blender with the cocoa powder and vanilla extract. Blitz to a very smooth puree. Pour in a little water if it’s not coming together.  Spread your banana ice cream over the cooled base, then top with the rice krispie mix. Freeze the whole thing for a few hours.


Step 4


Melt the dark chocolate in a microwave and it drizzle over the cake. Freeze for 5 more minutes before serving. Serves 8
