Vegan Ice Cream Cake

This is the winning recipe for the vegan battle. Who doesn't like an ice cream cake?
- 50 g peanut butter
- 25 g dark chocolate
- 150 g rice krispies
- 6 tbsp Cocoa powder
- 300 g bourbon biscuits
- 6 overripe bananas
- 100 g coconut oil
- 2 tsp vanilla extract
- 1 tsp sea salt
- 50 g cashew nut butter
Freeze The Bananas
Slice the bananas into thin chunks and place onto a baking tray lined with greaseproof paper (they can overlap a bit).
Freeze the banana slices overnight.
Make The Base And Top
Crush the biscuits in a ziplock bag and melt the oil in a small pan or a microwave.
Stir the oil into the biscuits and press the mixture into a loose bottomed springform pan.
Stir the nut butters and sea salt into the rice krispies until well combined.
Make The Ice Cream
Place the frozen bananas into a blender with the cocoa powder and vanilla extract. Blitz to a very smooth puree. Pour in a little water if it’s not coming together.
Spread your banana ice cream over the cooled base, then top with the rice krispie mix.
Freeze the whole thing for a few hours.
Melt the dark chocolate in a microwave and it drizzle over the cake. Freeze for 5 more minutes before serving.
