Recipe: Apple Lemon Pork


Pork on the bbq just goes so well and the marinade means that it will stay nice and juicy. You want the bbq really hot so that you can caramelise the fat without overcooking the pork!


  • 200 ml apple juice
  • 1 tbsp cider vinegar
  • 1 tbsp honey
  • 1 tbsp dijon mustard
  • 2 tsp lemon zest
  • 1 clove garlic
  • 2 tbsp soft brown sugar
  • 2 big bone-in chops

Marinate The Meat

Combine all of the ingredients for the pork marinade in a bowl. Coat the meat in the marinade. Cover the bowl with clingfilm and leave in the fridge for a few hours.

Reduce The Marinade

Heat up your barbecue! Take your meat out of the marinades and put the marinade into a small saucepan. Reduce it until it's thicker and slightly sticky.

Grill The Meat

Rub the oil over the meats. Put the meats onto the grill and leave them alone to get some really good colour. Do this for all sides. Once all sides are browned start basting the meat with the reduced marinade and turning often to glaze and caramelise even more. When the pork reaches 65ºC (probably 10-15 minutes of cooking, depending on the size of your chops) remove them and leave to rest for 10 minutes.
