Recipe: Caramelised Banana Sweet Potato Toast
We couldn't go on a sweet potato toast binge without trying out something sweet. Banana, nutella and peanut butter is a bit of a classic combination that is perfect with sweet potato!
Remember to make it homemade nutella to make this vegan!
- 2 bananas
- 2 tbsp soft brown sugar
- 1 tsp cinnamon
- 2 tbsp peanut butter
- 2 tbsp homemade nutella
- 1 large sweet potato
- 2 tbsp salted peanuts
- 1 tsp sea salt
Cook The Bananas
Slice the banana and tip in into a mixing bowl with the brown sugar and cinnamon.
Heat a frying pan over a high heat and add the banana slices (in two batches if the pan gets crowded). Fry until the sugar caramelises to a nice golden brown.
Toast The Potato
Slice the potato lengthways into 0.5cm slices and pop them into the toaster. It will take a few cycles to cook!
Put your potato slices onto 4 plates and Spread over the peanut butter, followed by the Nutella.
Place the banana slices onto the sweet potato.
Scatter over the peanuts and some flaked sea salt if you like. Eat it all up!
