Recipe: Oreo Doughnut Holes

- 4 tbsp Cocoa powder
- 1 egg, beaten
- 1 tsp salt
- 50 g melted butter
- 1 tsp vanilla extract
- 2 packets oreos
- 100 g melted dark chocolate
- 7 g fast action yeast
- 1 tbsp icing sugar
- 500 g mascarpone cheese
- 250 ml full fat milk, warmed
- 450 g plain flour
- 4 tbsp caster sugar
Make The Dough
Measure the flour, yeast, sugar and salt into a bowl and mix well.
Add the milk, vanilla extract, melted butter and egg to the bowl and using your hands mix it until it forms a ball.
Turn the dough out onto a lightly floured work surface and knead for about 5 minutes until you have a smooth dough…. This can be done in a mixer if you have one.
Prove The Dough
Place the dough back into the bowl and cover with a tea towel.
Leave to prove in a warm dry place for about 45 minutes until doubled in size.
Remove the dough from the bowl and shape into flat balls about 40g each, making sure the ball is tight.
Leave to stand for about 20-30 minutes until puffy.
Make The Filling
Meanwhile blitz up the oreos into a fine crumb.
Spoon the icing sugar and 2 tbsp of the oreos into a bowl with the mascarpone cheese and mix well. Transfer to a piping bag. Put the remaining oreo crumb into a large, shallow bowl.
Cook The Doughnuts
Heat the oil in a deep fat fryer or saucepan to 165°C.
Fry in small batches for 2-3 minutes on each side until golden.
Remove carefully, roll the doughnuts in the oreo crumb and leave to cool.
Fill And Serve!
Carefully slice the doughnuts in half crossways and pipe the cheese mix over one half press a whole oreo into the cheese. Sandwich the two halves of each doughnuts around the cheese mix.
Pour a little of the melted chocolate over each doughnut so that it dribbles down the side, add more oreo crumb and eat up!
