Community Recipe: Lighter Potato Salad With Asparagus

Have you ever thought about adding asparagus to your potato salad? Well you should, cause it's delicious!


  • Four medium potatoes
  • One pack green asparagus tips
  • One tbsp mayonnaise
  • Two tbsp yogurt
  • Two spring onions
  • Pinch salt and pepper
  • Half a red chilli, sliced (optional)
  • Squeeze of lime

Step 1

Boil Potatoes And Asparagus

Cut your potatoes into bite-sized chunks - no need to peel them. Boil or steam them until cooked but not too soft - about 8-10 minutes. Slice your asparagus into inch-long pieces and add them to the pan for the last two minutes of cooking. Drain and let cool.

Step 2

Prepare The Dressing

Add the mayo, yogurt, salt and pepper and lime juice, chilli and half of the spring onion to a large bowl and mix well. Taste and keep adjusting the seasoning until you are happy.

Step 3


Add your cooled potatoes and asparagus to the bowl and mix well. Finish off with the rest of the spring onions on top. Refrigerate for a good while to let the flavours come together.
