Cheesy Bread: Pao De Queijo
When we did a series on Brazilian food and didn't do pao de queijo there was worldwide outrage. This was requested so much that we just had to try them. You were right... they're really, really good.
- 240 ml milk
- 120 ml vegetable oil
- 400 g tapioca flour
- 2 tsp garlic powder
- 2 eggs
- 100 g parmesan cheese
- 1 tsp salt
Preheat The Oven
Preheat the oven to 220ºC and line a baking tray with greaseproof paper.
Make The Dough
Pour the milk and the oil into a medium saucepan and heat until to a gentle boil.
Add the tapioca flour and the garlic powder and beat to a grainy dough.
Beat The Dough
Tip the dough into the bowl of a stand mixer with a paddle attachment.
Beat the dough until cooled and smooth, then add the eggs one at a time.
Finally add the cheese and continue to beat until the dough is smooth again.
Roll The Balls
Spoon the dough into 30g balls and roll on a table using the palm of your hand to get a smooth surface.
Place the balls onto the tray with space between them.
Bake And Serve
Put the tray into the oven and turn it down to 190ºC then bake for 15 minutes until just golden and cooked (you still want them slightly doughy and chewy in the middle.
Allow the balls to cool slightly and enjoy!
