Recipe: Potato Salad


There's nothing better to have on it's own or as part of a big BBQ table spread than a really good potato salad. Make sure it's really really good with this recipe.


  • 1 kg new potatoes
  • 1 large red onion
  • 100 g spinach
  • 100 g creme fraiche
  • 50 g mayonnaise
  • 1 tbsp white wine vinegar
  • 1 tbsp lemon zest
  • 2 tsp capers
  • 1/2 bunch parsley
  • 2 sprigs mint
  • 100 g watercress

Step 1

Cook The Potatoes

Cut the potatoes in half and add them to a large saucepan filled with salted water. Bring the water to a simmer and cook for 13-14 minutes, until the potatoes are just cooked through and you can easily push a knife all the way through. Scoop the potatoes out of the pan of water with a slotted spoon so that you keep for the water for the next job.

Cook The Onion And Spinach

Dump the onion and spinach into the pan used for the potato and leave for 1 minute before draining everything into a colander... This is just enough to blanch the onion and wilt the spinach. Allow to cool, then squeeze out the excess water.

Make The Dressing

Scoop the crème fraiche and the mayonnaise into a large mixing bowl. Add the white wine vinegar and lemon zest. Chop the capers, parsley and mint, then add those to the bowl too and mix well.

Add the warm potatoes, red onion and spinach to the bowl and coat it all in the sauce.


Step 5


Serve in a big bowl to go in the middle of the table and garnish with plenty of watercress. Serves 6
