Recipe: Mango And Coconut Popsicles

- 400 ml coconut milk
- 1 tbsp lime zest
- 150 g mango, peeled, destoned and roughly chopped
- 1 tbsp desiccated coconut
- 1 tbsp coconut oil
In a blender pulse all the ingredients for the popsicles until you have a smooth mixture. *Make sure the mango is ripe and the coconut oil isn’t too cold.
Pour the mix into ice pop moulds and put them in the freezer for 4-6 hours, until completely frozen.
To serve, take the ice pops out of the freezer 10 minutes before you want to eat them and use a bowl of hot water to free the ice pops from the moulds.
Makes 4 of each (depending on the size of your moulds)
