A really yummy and affordable snack.

Ingredients

  • 1 tsp dried oregano
  • pepper
  • ½ onion
  • 1 tomato
  • 4 red bell peppers
  • 20 green beans
  • 2 garlic cloves
  • 2 small zucchinis
  • 2 tsp dried basil
  • ½ broccoli head
  • 1½ cup brown rice
  • 1 tsp cumin
  • salt
  • ½ tbsp grapeseed oil
  • 1 tsp dried oregano

Preheat an oven to 200C or 400F and grease a baking tray.

Cut peppers in half and core. Place on a tray cut side down and roast for 25-30 minutes.

Prepare the brown rice.

Heat oil over medium heat.

Onion and garlic for 5 minutes

Add some veg

Add diced zucchinis, green beans and broccoli. Cook for 5 minutes
