Recipe: Raw Vegan Mint Slice


Sorry I haven't been uploading! I've been busy with my final year of high school very stressful - but here is a very adapted recipe of the hippie lane recipe as I was missing a lot of the ingredients but was seriously craving :')


  • 30 ml maple syrup
  • 60 ml water
  • 1 tsp vanilla
  • 45 g raw buckwheat
  • 60 g walnuts soaked overnight
  • 1 tsp vanilla
  • 12 dried dates soaked in boiling water for 10 mins
  • 55 g almonds soaked overnight
  • 25 g cacao powder
  • 60 g cacao butter
  • 150 g cashews soaked overnight
  • 25 g cacao powder
  • 60 ml coconut oil
  • 1 tsp peppermint essence
  • 60 ml maple syrup

Step 1


Take 60g walnuts, 45g buckwheat, 25g cacao powder, 1 tsp vanilla, 12 dates and 30ml rice malt syrup in a food processor until sticky Line a loaf tin with baking paper and press mixture into the bottom. Place into freezer to chill

Step 2


Blend 150g cashews, cacao butter, 60ml maple syrup, water and peppermint until very very smooth - no but chunks Pour over base and freezer for a few hours. NB cacao butter should be melted

Step 3


NB coconut oil should be melted blend almonds, coconut oil, 30ml maple syrup, 25g cacao powder and remaining vanilla until smooth and creamy. Can strain through sieve if too chunky. Pour over filling and freeze until set.
