Key Lime Jelly Pots
This is a combination of a cheesecake, a jelly and a key lime pie. Amazing sweet flavours balanced with zingy lime. It looks great, tastes amazing and when you see how easy it is to make each layer you'll be making this one we promise!
- 250 g oreo cookies
- 100 g unsalted butter
- 4 large limes
- 200 g condensed milk
- 300 ml double cream
- 1 packet lime jelly
Make The Base
Crush the biscuits with an end of a rolling pin in a bowl until it resembles a breadcrumb texture.
Melt the butter in the microwave and mix in with the biscuits.
Divide the biscuit mix into 6 serving glasses or ramekins and press down to form a base for the dessert.
Make The Lime Cream
Zest and juice the limes and put the juice in a mixing bowl.
Whisk the condensed milk and cream into the juice for a few minutes and then stir in the lime zest.
Set The Lime Cream
Pour into the ramekins on top of the biscuit base and set in the fridge for an hour.
Make The Jelly And Set
Boil a kettle and make up one block of jelly according to the packet instructions, then allow to cool to room temperature.
Pour the cooled jelly on top of the moussey lime pots to create a layer about half a cm thick and return them to the fridge to set for an hour or two.
Serve Right From The Fridge
Serve straight from the fridge to showcase this zingy layered dessert.
