Recipe: Cosmo Fool

COSMO FOOL

This is one of those showy and impressive looking desserts that takes it's inspiration from the popular 'Cosmopolitan' cocktail. The addition of some frozen vodka grapes creates a talking point... little will your guests know that the dessert took less than 5 minutes to make!

Ingredients

  • 1 handful black grapes
  • 4 shots vodka
  • 250 ml natural yoghurt
  • 250 ml créme fraiche
  • 1 orange
  • 1 lime
  • 1 tbsp icing sugar
  • 2 tbsp cranberry sauce
soak the grapes in vodka

Step 1

Soak The Grapes In Vodka

Pluck the grapes off of the stalks and stab each grapes a few times with a cocktail stick. Put the grapes in a small plastic container with the vodka and leave them in a fridge to absorb some vodka for a few hours.

Freeze The Soaked Grapes

Transfer the vodka soaked grapes to a clean bowl and put them into a freezer for a couple of hours.

Make The Fool Mix

Stir the yoghurt and crème fraiche together in a bowl and whisk in the icing sugar and cranberry sauce.

Zest Citrus Into The Mix

Zest the whole of the orange and half of the lime into the creamy mix, then slice the remaining half of the lime into thin slices as a garnish.

Divide Into Glasses & Serve

Divide the fool mix between 4 cocktail glasses and place three of the frozen vodka grapes on top of each then garnish with a thin slice of lime slit onto the edge. Makes 4

Another Cocktail before I return to the UK. This one is named after the Tart named after the Derbyshire Village. And what a Tart/ Cocktail/ Village it is well. Much like the Blue Lagoon, this one is served in a lot of Pubs/ Bars in the UK, and considering how few ingredients it has, it sounds me how much Gaul pubs have to charge so much for it. You can use Soda Water but I like using Sprite for a more refreshing taste. Garnish with a Glacé Cherry to be really fancy.
