Recipe: Pulled Jerk Chicken Wraps
Don't mind us, just creating more fusion magic over here. Take a delicious jerk chicken recipe (pulled so it's even better) and add cooling yoghurt before throwing it all in a wrap. Just call us geniuses, it's ok... we know.
- 1 onion
- 2 cloves garlic
- 2 tbsp vegetable oil
- 2 tbsp jerk seasoning
- 1 tbsp honey
- 1 tbsp tomato paste
- 2 chicken breasts
- 150 g frozen peas, thawed
- 200 ml greek yoghurt
- 1 bunch fresh coriander
- 1 lime
- 6 flour tortilla wraps
- 2 little gem lettuces
- 1 red chilli
- 1 lime
Cook The Chicken
Place the chicken breasts in a pan of water and heat gently to a simmer, do not let it boil rapidly.
Simmer gently for 10 minutes, then grab the chicken out and leave to cool.
Fry Onions And Garlic
Peel and finely dice the onion and garlic, then fry with the oil in a saucepan with a lid for 5 minutes to soften.
Add The Spices
Squeeze the honey and tomato purée into the cooked onion mixture with the jerk seasoning and cook for another 30 seconds before removing from the heat.
Add The Chicken
Pull the chicken into thin strips and add to mixing bowl with the yoghurt, chopped coriander, defrosted peas, onion mixture and juice of the lime.
Mix together, season with salt and pepper.
Construct The Wraps!
Lay a tortilla flat on the work surface and lay a couple of leaves of washed lettuce just above centre.
Pile on a couple of heaped tablespoons of the filling then fold up the bottom.
Fold and serve the wrap with slices of lime and a scattering of freshly sliced red chilli.
