Recipe: Ultimate Twix Cookies!!!

- 225 g salted butter, cold
- 100 g corn flour
- 225 g plain flour
- 110 g vanilla caster sugar
- 1 tbsp vanilla extract
- 1x 398 g tin of caramel
- 200 g milk chocolate
Make Some Shortbread!
Dice the cold butter and rub it into both of the flours, combined in a bowl, until you have a breadcrumb looking consistency.
Stir the sugar and vanilla into the bowl.
Using your hand, press and squeeze the mixture together until you have one lump of shortbread dough, try to avoid kneading it.
Roll the dough out between two sheets of baking paper to the thickness of 1cm then chill in the fridge for at least 30 minutes.
Cut Some Shapes!
Preheat an oven to 150ºC.
Cut circles 5cm across out of the chilled dough and transfer to a baking paper lined baking tray, being careful to maintain their circular shape.
Keep them apart on the tray as they may spread a little in the oven.
Shake And Bake! (Just Bake)
Bake for 20 minutes (they shouldn’t gain much colour), then leave to cool on the tray before trying to move them as they will be very delicate and crumbly.
Line them up neatly on a tray to make putting them in the fridge easier.
Top 'em Off!
Beat the caramel to get rid of any lumps and then pipe or spoon a little onto the top of each cookie.
Melt the milk chocolate (temper it if you want a perfect finish) then spoon a blob on top of each caramel disc.
Allow the chocolate to level out and then chill in the fridge for 20 minutes to set before serving.
