Recipe: Secret Veggie Pasta Bake

This cheesy, hidden vegetable pasta bake is perfect for someone wanting to increase their veggie intake. It's so tasty and simple to make if you have a big family and lots of hungry mouths to feed. Get your 5 a day in secretly.
Ingredients
- 1 red onion, peeled
- 1 clove garlic, peeled
- 1/2 aubergine
- 1 courgette
- 1 red pepper, core removed
- 1 yellow pepper, core removed
- 1 glug olive oil
- 400 g chopped tomatoes
- 1 handful fresh basil
- 1 squeeze honey
- 325 g sweetcorn, drained
- 350 g penne pasta
- 1 handful grated cheddar

Step 1
Preheat The Oven
Preheat the oven to 200°C.

Step 2
Boil The Water
Heat up a large pan of slightly salted water until it boils.

Step 3
Dice & Fry Off The Veggies
Dice the red onion, crush the garlic and roughly dice the aubergine, courgette and the peppers. Put all the vegetables and garlic in a medium hot pan with the oil and fry for a few minutes.

Step 4
Simmer The Sauce
Add the chopped tomatoes, basil, honey and seasoning and simmer for 20 minutes until the vegetables are soft and cooked.

Step 5
Cook Pasta & Blitz Sauce
Dump the pasta in hot boiling water and boil until the pasta is just cooked, then drain. Blitz the tomato and vegetable sauce with a hand blender until smooth.

Step 6
Blitz Sauce And Mix
Mix the sauce with the pasta, sweetcorn and tip into an ovenproof dish before sprinkling with cheese.

Step 7
Bake And Serve
Bake in the oven for 10 minutes until it is hot and crispy on top. Serves 4.
