Recipe: SECRET VEGGIE PASTA BAKE
This cheesy, hidden vegetable pasta bake is perfect for someone wanting to increase their veggie intake. It's so tasty and simple to make if you have a big family and lots of hungry mouths to feed. Get your 5 a day in secretly.
- 1 red onion, peeled
- 1 clove garlic, peeled
- 1/2 aubergine
- 1 courgette
- 1 red pepper, core removed
- 1 yellow pepper, core removed
- 1 glug olive oil
- 400 g chopped tomatoes
- 1 handful fresh basil
- 1 squeeze honey
- 325 g sweetcorn, drained
- 350 g penne pasta
- 1 handful grated cheddar
PREHEAT THE OVEN
Preheat the oven to 200°C.
BOIL THE WATER
Heat up a large pan of slightly salted water until it boils.
DICE & FRY OFF THE VEGGIES
Dice the red onion, crush the garlic and roughly dice the aubergine, courgette and the peppers.
Put all the vegetables and garlic in a medium hot pan with the oil and fry for a few minutes.
SIMMER THE SAUCE
Add the chopped tomatoes, basil, honey and seasoning and simmer for 20 minutes until the vegetables are soft and cooked.
COOK PASTA & BLITZ SAUCE
Dump the pasta in hot boiling water and boil until the pasta is just cooked, then drain.
Blitz the tomato and vegetable sauce with a hand blender until smooth.
BLITZ SAUCE AND MIX
Mix the sauce with the pasta, sweetcorn and tip into an ovenproof dish before sprinkling with cheese.
BAKE AND SERVE
Bake in the oven for 10 minutes until it is hot and crispy on top.
