Recipe: Fluffy Strawberry Mousse

FLUFFY STRAWBERRY MOUSSE

This creamy and light strawberry mousse is easy and our most popular fruit pudding recipe. It's a hassle free dessert with no gelatin that you can make the day before and bung in the fridge until needed...

Ingredients

  • 200 g strawberries
  • 2 egg whites
  • 1/2 small lemon, juiced
  • 120 g caster sugar
  • 60 ml double cream
  • 1 handful chopped hazelnuts, toasted
  • 2 squares dark chocolate
  • 3 sprigs fresh mint
  • 2 small marshmallows to garnish
Blitz Strawberries

Step 1

Blitz Strawberries

Reserve a couple of the best strawberries to garnish at the end, then hull and halve the rest. Blitz 150g of strawberries in a blender with the juice of the lemon and sugar.

Whip Cream and Egg Whites

Whip the cream to soft peaks in one bowl and do the same with the egg whites in another clean bowl.

Mix Strawberry and Cream

Fold the strawberry purée into the cream until it is no longer marbled.

Fold in egg whites

Step 4

Fold In Egg Whites

Spoon half of the egg whites into the strawberry cream and fold together, maintaining as much air as possible. Add the rest of the egg whites into the mix and fold again before dividing between your serving glasses.

Chill in Fridge

Cover the glasses with Clingfilm and chill in a fridge for at least 2 hours before serving.

Finish with Garnish

Chop the chocolate and hazelnuts together then scatter over the mousse before garnishing with some of the saved fresh strawberries and a sprig of mint. Makes 4
