Recipe: Vietnamese Beef Pho

VIETNAMESE BEEF PHO

We have had loads of requests for beef pho so we have come up with an easy and delicious recipe that anyone can make at home. This Vietnamese noodle soup is packed full of flavour and takes less than 10 minutes to make... so quick, tasty and healthy... what's not to like?

Ingredients

  • 1 Other large onion
  • 1 knob ginger, peeled
  • 1 stick lemongrass
  • 1 Other red chilli
  • 1 glug sesame oil
  • 2 Other star anise
  • 1 Other cinnamon stick
  • 300 g beef steaks
  • 2 mugs beef stock
  • 1 handful beansprouts
  • 2 handfuls easy cook rice noodles
  • 1 handful spring onion, chopped
  • 3 sprigs mint, chopped
  • 1 bunch basil, chopped
  • 1 bunch coriander, chopped

Slice Onions

Peel and slice the onions into rings.

Grate the ginger and finely dice the lemongrass and chilli.

Put the star anise, cinnamon, onions, ginger, lemongrass and chilli into a pan with a shot of oil and cook for a few minutes.

Slice the beef into thin strips and add to the pan and stir to coat in the flavours.

Splash in the beef stock and bring to a gentle simmer.

Throw in the beansprouts and noodles and cook for a few minutes until the noodles are tender.

garnish and serve

Garnish with chopped spring onion and herbs, then dig in! Serves 2

They didnt do it the traditional way . If they did they would put the noodles and raw beef together then pour in the broth and because it is hot it will cook you might have to do it again if you want the meat to be even more cooked
