Most people associates koftas with lamb but we have used the great combination of chorizo and pork mince to create something that makes an awesome light bite or lunch. Much better than a greasy takeaway!
Preheat oven to 180°C.
Dice the chorizo (removing any waxy skin) and mix with the minced pork.
Hack up the coriander, grate the garlic, dice the red chilli and add them all to the pork.
Mould into 8 chunky kofta shapes (sausages).
Pan fry them in an ovenproof hot pan until coloured on all sides and transfer the whole pan to the oven for 10 minutes until they are cooked through.
Peel and grate the carrot into the yoghurt with the cumin, then season.
Serve the koftas in a wrap with the rocket, grated carrot and a dollop of the yoghurt. Serves 4.
