Thanks to @pastryismylife for giving me her recipe. I added a few things and spiced it a bit up. Such a great dish for brunch or when ever you are hungry.

  • 1 onion
  • 3 cloves of garlic
  • 1/2 green chilli
  • 1 red bell pepper
  • 150 g Cherry tomatoes
  • 1 tbsp parsley
  • 1 tbsp dill
  • 2 tbsp olive oil
  • 3 eggs
  • 1 tbsp tomato paste
  • 50 ml wine or water
  • 1 tsp salt, pepper
  • 1 tsp oregano, cumin
  • 1 tsp smoked paprika
  • 60 g feta
chop everything

Step 1

Chop Everything

chop onion, garlic and chilli and give it a good head start in a wide pan for 5 -8 minutes until soft, season with salt and pepper. Add the pepper and tomato and cook until softend

Use some wine or water -preheat oven 180 C

Step 2

Use Some Wine Or Water -Preheat Oven 180 C

when you only have canned tomatoes on hand, you do not need extra liquid, but cherry tomatoes need some more. Add the tomato paste and cook it, add all the spices and cook for 10 more minutes. Then make 3 holes with a spoon and set one egg in each hole. Season. Sprinkle with a few feat cubes. Now you have 2 choices, either put it in the oven for 6 minutes or put a lid on and let it set on the stove. Check when the egg white is one and the yolk still soft. Serve with bread to mop up the sauce
