Recipe: Healthy Snickers Bar


My favourite chocolate bar got a makeover! High in protein and free of refined ingredients. I'll have three, thanks ;) New Year, same cravings, better ways to fix them!


  • 1 1/3 cup Oat Flour (or Ground Oats)
  • 1/3 cup Almond Flour
  • 1/3 cup Peanut Flour (or more oat flour)
  • 1 cup Vanilla Protein Powder (Use your favourite!)
  • 1/2 cup Honey or Agave (Vegan)
  • 1/2 cup Almond or Peanut Butter
  • 2 tbsp Coconut Oil
  • 1/3 - 1/2 cup Almond Milk
  • 1/2 cup Pitted Medjool Dates, Soaked in Hot Water
  • 2 tbsp Coconut Oil
  • 2 tbsp Nut Butter, Softened
  • 1/2 cup Roasted Peanuts
  • 1 cup Dark Chocolate Pieces
  • 1 tbsp Coconut Oil

Step 1

Making The Base

Mix all dry ingredients for the bar (the first four ingredients) in a large mixing bowl and set aside In a small saucepan combined the 1/2 cup nut butter, 2 tbsp of coconut oil and the 1/2 cup liquid sweetener until fully combined, if using flavourings or stevia drops add those into this mixture -- set aside when finished Pour sweetener/butter mixture over our dry ingredients and stir thoroughly, If your dough is too dry -- add a tablespoon at a time of almond milk or water until you can get a large ball of dough Press dough into an 8x8 pan lined with foil or plastic wrap Set in fridge for 15 minutes before adding the next layer.

Drain 80% of the water from your dates that have been soaking in hot water for 3-5 minutes and add into a food processor or blender Add in the 2 tbsp melted coconut oil and 2 tbsp nut butter. Blend until you have a thick creamy 'caramel' Remove bars from fridge, spread 'caramel' layer evenly over bars and sprinkle peanuts over caramel - use your hands to gently press the peanuts into the caramel. Place back in the fridge to set for another 30 - 60 minutes until firm before dipping them in the chocolate.


Step 3

Dip It!

Once bars are completely set cut them into as many bars as you'd like -- I made 10 very large bars -- you can choose less or more! Melt down your chocolate and coconut oil in the microwave and stir until JUST before it's all fully melted. Mix together gently until the chocolate is smooth. Dip each bar and set on wax paper to dry Enjoy! Store left over bars in the fridge.
