Guacamole is really easy to make and I was shocked to discover that people buy guacamole as guacamole, so here's my recipe which is inspired by many recipes I've used over the years (because I'm really old).
It obviously tastes amazing with chips (as in, crisps) but I also love it with chicken.
Also I must confess the photograph isn't mine. I will update with a photo next time I make it.
- few drops sriracha sauce
- 1 avocado
- salt & pepper
- ½ lime juice
- handful fresh coriander
Cut the avocado in half (remember it has a giant stone in it) and scoop out the insides.
Chop / Mash
Roughly chop the avocado, and put it in a bowl. Mash with a fork. It's always nicest chunky, but mash as much as you want to mash.
Squeeze the lime into the mashed avocado, and mix together, mashing a little more as you go. Tear coriander into it and mix in
Add as much sriracha as you want. This ingredient may sound a little strange, but if you're cooking on a budget or only for one, I find it hard to buy veg in small enough quantities to make it worth buying at all. I promise it works. Lots of recipes as for both garlic and chilli, and guess what sriracha is!
Finally, season with salt and pepper because you do that for everything, right?
