Steam Stale Bread With Meat

A great way to use stale bread beside bread crumbs or bread pudding. Vietnamese street food.
- 2 tbsp Lemon Juice
- Spring Onion
- 100 g White Radish
- 10 g Dry Shrimp (optional)
- 30 g Dice Onion
- 100 g Ground beef and pork
- 3 Slices Bread (plain baguette is the best)
- 2 tbsp Fish Sauce
- 2 tbsp Sugar
- 1 clove garlic
Slice bread lengthwise and cut into 10cm pieces.
You can slice it diagonally into 10cm long pieces. My left over breads are cut this way already, but they're big enough so it's fine.
SPRINKLE with a few tsp of water if your breads are too dry. Let they sit for 5-10 mins. They will get softened soaking all the steam later, but if you're using a regular dish instead of steaming dish I recommend you sprinkle a bit of water.
Prepare White Radish
Peel off. Slice into thin strips.
Soak in salted water for 10 mins or more to get rid of unpleasant bitter taste. Drain and squeeze as much as possible:
Soak these little beautiful shrimps in hot water for 20 mins until soft. Drain (use this stock to sprinkle on bread) and mash/chop them into small pieces.
If you don't have/like dry shrimps, skip it. They enhance Asian flavor really well. You can substitute with any kind of shrimp of your choice as long as it goes well with ground meat.
Stir Fry All The Ingredients
Sautéed diced onions until softened, add ground meat and stir well.
Add shrimps when all meat are brown, season with 1TSP of soy sauce.
Add white radish and stir well. Water from radish will wet this mixture, so you need to stir constantly on high heat and let the liquid evaporate. We need it the mixture to be dry.
Place The Bread Into The Steamer
No I'm kidding, I do have any fancy steamer.
I place a dish in a pan with boiling hot water, put towel under the place to prevent it from breaking (I'm not sure if it's heat-resistant or not).
Steam the bread for about 5 mins. Then add the stir-fried meat mixture on top on each slice.
Steam for another 10 mins.
Add 2 TBSP of fish sauce, 2 TBSP of sugar, 2TBSP of lemon juice, 6 TBSP of water.1 clove of chopped garlic, chili to your taste.
Mix well until incorporated.
Microwave for 30sec to make it warm, it will go well with hot steamed bread better than cold sauce.
Sprinkle some green onions to garnish. I don't like raw onions so I sautéed them into hot oil for few seconds.
Serve with warm fish sauce.
How to eat in a proper Vietnamese way: Wrap the bread with lecture leaves to make it look like a roll, you can add some pickles or fresh herbs. Dip in the sauce and put it in you mouth! Voila!
