#RENNIEHAPPYEATING DUCK BAO WITH KUMQUAT

I was lucky enough to be picked for the Rennie Mystery Box Challenge and my mystery ingredient were kumquats! Kumquats are similar to oranges, so I decided to pair this with duck and Asian-fy it by stuffing it into a steamed bun and using classic ingredients like 5 spice and soya sauce. The result is a delicious, sweet and salty dish with refreshing cucumber and spring onion, much like a modern spin on the classic crispy duck and pancakes! Ingredients

  • x1 packet bao
  • x2 duck breast
  • x15 kumquat
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp brown sugar
  • 1/2 tsp 5 spice powder
  • 1 tsp dark soya
  • 1 tsp light soya
  • 1/2 cup water
  • 3 tsp plum sauce
  • Small wedge lemon
  • 1/2 cucumber
  • 2 spring onion
Marinade the duck

Step 1

Marinade The Duck

Preheat the oven to 220C. Wash the duck and shake off excess water. Add the salt, brown sugar, garlic powder, white pepper, 5 spice powder and dark and light soya sauce over the duck breasts and rub well with your hands so that it is evenly coated.

Slice 5 of the kumquats and lay in a roasting tray. Add marinaded duck breasts on top, and pour 1/2 cup of water around the meat. If you like your duck a little pink, check after 15-20 minutes, or if you prefer it medium well like I do, 25 minutes is just right

Whilst the duck is roasting, chop/prepare the cucumber and spring onion. If you are planning on steaming the bun, do this now, but if you plan to use the microwave, you can heat the baos when the duck is cooked

Make the kumquat and plum sauce

In a food processor, add the remaining 10 kumquats and pulverise until smooth, skin included. Add in the plum sauce and a squeeze of lemon, and blend well. Pour into a small non stick saucepan and stir gently on low heat for 5 minutes. The heat will caramalise the sugars in the sauce and make it a little stickier

When your duck has finished roasting, rest it for 5 mins and then slice into thin pieces
