Recipe: RAINBOW CAKE
We put our heads together to make the very best Rainbow Cake recipe and we're pretty happy with the results... Not double, but TRIPLE Rainbow Cake with an M&M centre, four-tone buttercream icing and Skittles. Who needs a pot of gold now?
Ingredients
- 170 g softened butter
- 300 g caster sugar
- 2 eggs
- 1 tsp vanilla extract
- 175 g plain flour
- 300 ml milk
- 7 food colouring gels
- 1 handful M&Ms
- 125 g softened butter
- 250 g icing sugar
- 1 handful skittles
Step 1
PREHEAT THE OVEN
preheat an oven to 180ºC.
Step 2
BEAT AND FOLD TOGETHER
beat the butter and sugar together until pale and fluffy. crack in the eggs and beat until combined. stir in the vanilla extract, then fold in the flour.
Step 3
DIVIDE
loosen the mixture with the milk, then divide into 7 bowls.
Step 4
GET COLOURFUL!
colour each bowl of mixture with a squeeze of gel. transfer the individual cake mixes to piping bags (you can use sandwich bags with the corner snipped off if you don't have piping bags)
Step 5
BAKE
layer the colours in a straight-sided oven proof glass... make sure you get the order of colours right! bake for 30 mins in a tray with a little water.
Step 6
MAKE THE ICING
cream the butter and icing sugar together, then divide into 4 bowls and colour according to your preference. arrange the butter icing in a long line of alternating colours on a sheet of clingfilm then roll into a sausage. repeat with a second. lower both butter cream sausages into one piping bag with a star nozzle.
Step 7
ADD THE M&MS
scoop out the top few centimetres of the cooked sponge so the top layer is the same thickness as the rest. remove the centre core and carefully fill with M&Ms
Step 8
FINISH IT OFF
pipe the 4-tone icing onto the top of the cake and finish with skittles.

I used Wilton gel coloring to make the ombré. First attempt. Not too terrible. ^_^
