Recipe: Speedy Prawn Potstickers


Dumplings are such a great thing to cook at home and potstickers are one of our favourite ways to have them. First they're fried on one side, then you just pour in water and steam to finish off the cooking. A prawn filling is absolutely delicious but you can mix it up with whatever you fancy.


For The Filling

  • 10 g ginger
  • 300 g raw king prawns
  • 1 tbsp egg white
  • 1 tbsp soy sauce
  • 1/2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tbsp soft light brown sugar
  • 2 sprigs coriander

For The Wrapping And To Serve

  • 32 round wonton wrappers
  • 2 tbsp cold water, to seal
  • 1 tbsp groundnut oil
  • 100 g sweet chilli sauce

Step 1

Make The Filling

Peel and roughly chop the ginger then combine all of the ingredients for the filling in a Compact Food Processor with the blade. Pulse to a rough paste.

Step 2

Assemble The Dumplings

Grab a dumpling wrapper and hold it in your hand. Place 1 tsp of the prawn paste into the middle of a wrapper and use your finger to dab the edges with a little water. Fold the wrapper over so two sides meet, press the edges together and crimp with a fork to seal the mixture in.

Step 3

Cook The Dumplings

Put a frying pan (that you have a lid for) over a high heat and pour in the groundnut oil. Place the dumplings into the pan and fry on one side until well browned and crisp. Pour in 75ml of water and cover with the lid to steam until cooked through and the water has evaporated (about 4-5 minutes).

Serve the hot potstickers with the sweet chilli sauce. Makes 32
