Recipe: Spiced Nuts And Marinated Olives

SPICED NUTS AND MARINATED OLIVES

If you're in need of more ideas to wrap up as gifts for friends and family then here are two really simple ones that will get people salivating before they even get the ribbons and labels off. A combination of some spicy sticky nuts and our take on some marinated olives both look and taste great. Whether you take them along as an offering at any social occasion or wrap them as presents we know people will be asking you for the recipe!

Ingredients

  • 1 pinch ground allspice
  • 1 tsp salt
  • 1 tsp chilli powder
  • ½ tsp ground cayenne pepper
  • 1 bottle extra virgin olive oil
  • 1 tbsp coriander seeds
  • 300 g pitted green olives
  • 1 clove garlic
  • 50 g caster sugar
  • 300 g pitted black olives
  • 500 g selection of shelled nuts
  • 1 egg white
  • ½ tsp ground cumin
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Step 1

Preheat The Oven

Preheat an oven to 140°C.

Step 2

Flavour The Nuts

Separate an egg and whisk the egg white up in a clean bowl until it starts to foam. Whisk in the sugar, salt, mustard powder, cayenne and cumin. Stir in the nut selection and toss together to make sure they're all combined.

Step 3

Roast The Nuts & Package

Scatter the nuts across two lined baking trays so they are in a single layer if possible. Roast for 30 minutes. Loosen all the nuts and leave to cool completely before packaging them in an airtight container as a gift.

Step 4

Package The Olives

Crush the coriander seeds slightly and place into a jar with a peeled clove of garlic. Layer green and black olives into the jar along with the herbs. Pour in the oil to completely submerge the olives and seal the jar.

Step 5

Enjoy!

Keep for at least 3 days before enjoying, but they will last for up to 2 weeks out of the fridge. Makes 1 large jar olives & 500g of nuts (Recipe courtesy of Asda Magazine)
