Recipe: Hash Browns, Lemon Chicken And Pine Nut Peas

HASH BROWNS, LEMON CHICKEN AND PINE NUT PEAS

This is a great example of clean simple flavours making a really tasty meal. We inject a little bit of technique with the homemade hash browns...an easy way to impress guests!

Ingredients

  • 250 g a few handfuls peas
  • 1 handful pine nuts, toasted
  • 2 sprigs of mint
  • 100 g butter
  • 1 small onion
  • 4 large baking potatoes
  • 1 lemon
  • 2 cloves of garlic
  • 1 glug of olive oil
  • 4 chicken breasts, skin on
  • 1 large glass white wine
  • 1 glass of chicken stock

preheat the oven to 180°C.

cut the lemon into eighths then peel and slice the garlic.

heat the oil in an ovenproof frying pan and add the chicken, skin side down. fry the chicken until the skin is golden and crisp.

transfer the chicken to a baking dish and add the lemon and garlic to the pan. fry until the garlic is soft and the lemon begins to caramelise.

add the lemon and garlic to the baking dish around the chicken along with the wine, stock and pine nuts. season well with salt and pepper and bake in the oven for 15 minutes.

grate the potatoes

peel and grate the potatoes, using a course grater, into a bowl.

clarify the butter

melt the butter in a small pan, until the solids rise to the top. skim off the solids, leaving the clarified butter. dice the onion and very gently fry in the butter until soft.

mix the onions and potatoes

pour the softened onions into the grated potato and season the potato generously with salt and pepper.

heat a dry frying pan and spoon the potato mixture into patties (use a ring if you have one). Pack the potato pretty tightly. fry the hash browns over a medium heat for a few minutes on each side to go golden. place the hash browns into the oven alongside the chicken to cook for 10 minutes.

add the peas and mint

add the peas in and around the chicken for the last 5 minutes of cooking. slice the mint as finely as you can.

Serve up and tuck in!
