Recipe: Carrot Cake

CARROT CAKE

What's better than a carrot? CAKE What's better than a carrot cake? BIGGER CARROT CAKE!! Yep, we've made a giant carrot cake in the shape of a carrot because... Well, why not?! Plus we left all the nice cooking sounds in for you...!!

Ingredients

  • 170 g sultanas
  • 2 oranges, juiced
  • 170 g wholemeal flour
  • 170 g self-raising flour
  • 350 g soft brown sugar
  • 2 tsp bicarbonate of soda
  • 2 tsp cinnamon
  • 2 tsp mixed spice
  • 1 tsp salt
  • 250 ml sunflower oil
  • 4 eggs, beaten
  • 350 g carrot, grated
  • 100 g walnuts, chopped

Preheat the oven to 180°C.

Soak sultanas in the juice from the orange.

Sieve flours, soda, spices and salt into bowl. Pour in the eggs, sugar and oil then mix well.

Fold in the grated carrot, walnuts, sultanas and remaining orange juice.

Pour into a greased and lined 900g loaf tin and bake for 50 minutes. Repeat to make a second. Cool in tin for 5 minutes before turning out onto wire rack to cool completely.

Beat the cream cheese, icing sugar and marmalade together. Sandwich one cake on top of the other with some cream cheese.

Cut and shape the cake into a carrot. Cover the shaped cake with the marmalade frosting.

Add the fondant icing

Add The Fondant Icing

Colour the fondant icing to a carrot colour, leaving a small piece back to turn green. Roll on a surface lightly dusted with icing sugar. Lay over the cake, press it in and brush with hot marmalade to get a shine.

Score the carrot with knife to create rings and decorate with a green fondant top Makes 1 huge carrot cake!
