Recipe: Festive Sausage Rolls


This is the perfect way to use up leftovers from christmas dinner as finger food for the family on boxing day! You don't have to wait until after Christmas can grab these ingredients all year round for a cheeky snack any time ;)


  • 200 g brie
  • 1 cooked turkey breast
  • 1 slices puff pastry
  • 160 g parma ham
  • 100 g cranberry sauce
  • 1 egg (beaten)

preheat the oven to 200°C.

cut the brie and turkey into thin slices.

lay out the pastry

Lay Out The Pastry

unfold the pastry on a lightly floured work surface. lay a pieces of parma ham along the length of the pastry in a line.

add the brie and cranberry

Add The Brie And Cranberry

spread a thin layer of cranberry sauce on top of the parma ham. place slices of brie and turkey on top of this.

roll up the pastry

Roll Up The Pastry

brush each side of the layered food with beaten egg and roll the entire thing into a long sausage. trim the pastry just beyond where the pastry joins.

cut the long sausage into bite-sized pieces, but do not separate them out, then transfers the whole line of sausage rolls to a baking tray lined with baking paper. brush over them all with a little more egg wash.

place in the oven for about 10-15 minutes so that the pastry is golden and crisp.

allow them to cool slightly then cut right through to make them individual and pile them into a pint glass to serve. serves 4



My birthday is tomorrow, so I made Sorted inspired festive rolls with chicken, smoked ham and brie. I hope my guests will like it!


A bite sized piece of Christmas (or Thanksgiving in the US I suppose?). The type of turkey meat is really up to you and your budget. We started off using turkey mince, now I use about half mince (which I brown off) and half shredded turkey shank (which I slow cook in stock). If you have turkey left overs, even better!


Based on the turkey sausage rolls I used chicken and caramalised onion instead of cranberry. The plate was cleaned in no time :)
